Tomato, Sweet Potato and Lentil Soup - Instant Pot Recipe

Yield 3 large servings
Difficulty - Easy

Wholefood, plant-based, no oil, suitable for vegans




Ingredients

1 onion

2 cloves garlic

Salt

6 large vine tomatoes

2 medium sweet potatoes

100g split red lentils rinsed

3 cups water

Fresh basil - chopped


Method

Chop all the vegetables and add to the instant pot, add the lentils, add the water.

Cook at High Pressure for 8 minutes

Quick Pressure Release (or not if you're not in a hurry!)

Blitz with hand blender.  Add the chopped basil, blitz again if you want the soup smoother.

This really is delicious.  The sweet potatoes really work well in this soup.  It's smooth and creamy
